Pumpkin Zucchini Bread (Gluten Free and No Added Sugar)

Pumpkin Zucchini Bread (Gluten Free and No Added Sugar)

Ingredients:

  • 1 1/4 cup gluten free rolled oats (grind half of this to make oat flour)
  • 1/3 cup finely shredded zucchini with the juices squeezed out
  • 4 egg whites
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 cup of almond milk
  • 4 scoops of BNB Supplements Pumpkin Pie Whey Protein
  • 2 tsp of stevia powder

 Directions:

  • Mix all the oat flour and remaining oats together.
  • Add remaining ingredients and pour into loaf pan sprayed with non stick butter spray.
  • Bake @ 350 for 30 minutes or until golden brown.

 

Makes 12 slices.
